Our slow roasted Jericho lamb shoulder is a real Christmas showstopper; lamb shoulder marinated for 24 hours in pressed pomegranate juice, then massaged with a blend of garlic, onion puree, herbs and spices and marinated for a further 24 hours, before being roasted, low and slow, for 8 hours. Garnished with pomegranate seeds, butter browned nuts and parsley.
Accompanied by a spiced pomegranate gravy made from the pan sauces
